I am excited about this week's menu. Maybe because I feel like things just work together.
Monday - Salmon, wild rice, and asparagus
Tuesday - Taco salad
Wednesday - Stuffed cabbage (uses the leftover wild rice) and Greek salad
Thursday - Chile con corne pie (uses some of the corn leftover from taco salad)
Friday - leftovers
Saturday - hike to the peak
It is getting hot here and so time to eat salad meals except my local grocery store didn't have lettuce today. I am heading downtown tomorrow and again on Thursday so hopefully I can find some lettuce.
